This is a great little crowd pleaser and can be made for under 10 Euros and easily serves 4 people… So lets get stuck in!!

White Dill Sauce:

  • 1/2 cup mayo
  • 1/2 cup  greek yogurt
  • juice from 1 lemon or lime
  • 1/2 chilli pepper
  • 1/2 tsp. cayenne pepper
  • 1 tsp. dried oregano
  • 1 tsp. dried dill weed
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • pinch of salt
  • splash of water (like 2 tbs.)

  • 3 fillets of white fish
  • 2 eggs
  • 1 cup of flour
  • 2 cups of dried breadcrumbs
  • pinch of salt and pepper
  • 1/4 cup canola oil
  • 8 soft tortilla

  • 2 big tomatoes
  • 1/2 red onion
  • big handful of cilantro (coriander) chopped
  • 1 cup of chopped cucumber
  • pinch of salt
  • pinch of sugar
  • dash of pepper
  • 1 juice of a lemon or lime
  • 1 clove of fresh crushed garlic

  • half a small cabbage sliced thinly
  • half a lettuce sliced thinly

First start out with making your salsa. The longer it sits the better it will taste. Dice your tomatoes, cucumber and onion into small chunks. Chop up your cilantro (including stalks) finely, add to your veggies, then throw in your salt, pepper, and crushed garlic. Finish by squeezing your lemon or lime over the salsa, give it a good stir, cover and let stand.

After you’ve made up your salsa and have set it aside, you can start on the rest of the cooking. Now you’ll whip together the yummy Dill sauce! This is pretty easy, simply mix all the ingredients for the white sauce together, stir really well, cover with some plastic wrap and set aside… done.

Next you’ll want to bread the fish. To do this you will first want to pat it dry really well with some paper towel. After you’ve done that take your fish and cut straight down the middle so you have 2 halves, then cut with the grain to make bite size pieces. Once the fish is all cut in to shape put your flour in one bowl, your breadcrumbs salt and pepper in another, and your egg and milk beaten in another( 3 bowls) Now the key here so you don’t get into a great big mess with this is to not mix your dry ingredients hand with your wet ingredients hand. Check it….dip fish into flour and coat with one hand then with the other hand dip the fish in to the egg mixture, again with the other hand dip the fish into the breadcrumbs and coat them. Once all coated up with the mixture,  put on a plate, ready for the next step!!

Fish fry!!! Place oil into a frying pan on medium heat, slowly add the fish in batches. Do not over fill the pan or the fish will not cook evenly (small batches). Cook until golden brown ( about 5-6 mins) then transfer to a plate with paper towel to soak up excess oil.

Place another frying pan on medium heat and add the soft tortillas one at a time. Let them get slightly brown on each side, as each one is ready wrap them in foil with a tea towel so they stay warm.

Its time to assemble!! Place a warm tortilla on your plate, next add the crunchy fish, topp’er up with some lettuce, cabbage, the salsa and finally smother it in the white dill sauce…BOOM you are ready to enjoy some Baja Fish Tacos!!!
